Whether you have your own children or not, I believe that all women have been given a divine role to act as mothers in some form if they so desire.  So come on ladies, lets embrace this gift we have! :)

Who likes  fried ice cream?

(raises hand) Me! 

This is so so GOOD!

Today I am sharing one of my favorite desserts that I don’t seem to make often enough. This “better than fried, un-fried ice cream will make an awesome Cinco De Mayo treat, a wonderful Mothers day dessert, or its great in the summer or really any time of the year! If you like fried ice cream then I am almost certain you will love this recipe! I made over 200 servings of this for a banquet that I was in charge of food for. It was such a fancy yet easy dessert that went so well with our taco salad dinner.  We received so many positive compliments on the dessert so I know it’s a winner! I haven’t seen this version anywhere online but take my word, its worth a try… I just gobbled down the one pictured above! MmmMmmmm ;)

I love this version of fried ice cream because it is:

super easy to make

prep time is very quick

ingredients are very simple

it offers a perfect flavor combination

there are a variety of topping choices

can be made ahead of time and pulled out when ready to serve

and you will get this!

…that will shortly be this!

See? Even the inside looks good!

So lets get to the recipe. The ingredients are incredibly easy.

After prep re-freeze to a hard texture

Thats it. Awesome, Right? 

I personally love it with caramel topping but there are so many other yummy choices. fresh strawberries and strawberry puree or chocolate would also be awesome choices.

Only “Mom” can make the PERFECT  PB&J sandwich. Even apples and orange smiles taste better when she cuts them for you.

Have you ever just stopped and looked at your your Mother when she wasn’t aware you were? Try it! If you can’t see her in person then look at a photo. Think of all that she is, all that she does out of love for her children. When she is tired and weary, there is still much beauty that can be seen in her face, her eyes, her soul! 

Then take one of these cards and write a special message to her with some of your thoughts and share it with her. It will make her day, and it will make yours too!

UPDATE 4/21: Well the April fools joke was really on me! My April and May calendars had the wrong amount of days listed. April is 30 days and may is 31 and I switched them. I got my templates messed up and even though I do check that prior to making them I totally messed it up anyway! Ahhhhh I feel so stupid! As for April, lets just “pretend” we get an extra day. The new May calendar is corrected with the new download so you will see 31 days in May. And I doubt I will make this mistake again but I will still make mistakes. I do appreciate it when readers bring it to my attention so if you notice one please notify me through a comment or an email via my contact page. {I’m nice–promise!}

You know I love to find a reason to celebrate and I love the thought of making everyday a special occasion. That doesn’t mean that some days I prefer to lay low a bit, or keep to myself and  it also doesn’t mean that some occasions aren’t more special than others. It’s all about enjoying life and choosing to be happy {happi} everyday no matter what you do!

Remember Mothers Day is in May. Don’t forget to make a mother or someone close to you feel special that day. And start planning for the big memorial day weekend. Will you go somewhere, do something special, or just enjoy it chillin’ out at home?

Happy Teacher Appreciation week! Teachers really do an amazing service to our society. After all, our future generations are in their care for many hours a day! When I think of teachers, I think of all the COMMITMENT, INVOLVEMENT, and ENCOURAGEMENT and DEVELOPMENT they give. Don’t you think they deserve a COMPLIMENT?

SO…

I have created a gift idea and printale git tags that will give you a MOMENT to do just that!

With this in mind, Why don’t we take a moMINT to CompliMINT these teachers (or even our mothers) for their CommitMINT, EncourageMINT, and InvolveMINT in our kids developMINT! 

I know! This is another cheesey take on words but really it gets you thinking how important teacher appreciation is. Right? And who wouldn’t get some enjoyMINT this fun gift with these tags? 

You can use any kind of mints, like mints in a jar or whatever although I am partial to Oreo mint cookies. Seriously they are so YUM!

I also like to have a fun way to present a gift card too so this with a Starbucks or favorite restaurant or store gift card would make a really appreciated gift! 

I am talking about teacher appreciation today but I really think this would make a great gift for a friend or Mom. With Mother’s Day coming up I got you covered there too! Then there is the end of school year another opportunity to gift those special teachers in our lives.
